The Skinny Girls Apple Pie



If you're anything like me, then warm and gooey apple pie is simply irresistible. Especially in the Fall. However, it's pretty dang hard to just buy {or eat} one slice of pie. In a season ripe with eating sweets and decadent food, I welcome a lower calorie desert option. I stumbled across this recipe via Pinterest and decided to give it a try, with a few modifications.

The result?
All the scrumptious flavors of dutch apple pie but without the guilt.

Core 2-6 Gala or Macintosh Apples, depending on how many you need. Core enough to make about a silver dollar sized opening. Squeeze a little fresh lemon juice inside each apple. Combine 1/4 cup of brown sugar with 2 tablespoons of melted unsalted butter, 1 teaspoon of ground cinnamon, and 1/4 cup of chopped walnuts (candied, if you can find) in a medium bowl. If making more than 2 apples, double these ingredients. Fill each apple with an equal portion of filling and place in a crock-pot. Add 1/2 a cup of apple juice or apple cider, and 2 tablespoons of orange liqueur to the pot. I find that the texture is just right on LOW for about 5.5 hours, but it depends on personal preference. You can also set to HIGH for 3 hours. Sprinkle the apples with brown sugar on the top when ready to serve, and pour some of the collected juice from the bottom of the pot all over the top.
